Low Carb Blender Pancakes
 
Ingredients
  • 2 cups old fashioned oats
  • 1 - 16 oz container (or 2 cups) low-fat cottage cheese
  • 2 cups egg whites
  • 4 tsp baking powder
  • 2-3 tsp honey / sweetener
  • 1 tsp vanilla
Instructions
  1. Place 2 cups Old Fashioned Oats into blender and blend until they turn into a fine powder
  2. Turn the blender off and add 1-16 oz container (2 cups) low-fat cottage cheese and 2 cups of Liquid Egg Whites
  3. Add 4 tsp baking powder
  4. -3 tsp sweetener - we use honey but you can use another favorite sweetener of your choice.
  5. Add 1 tsp of vanilla.
  6. Blend well.
  7. Heat a nonstick griddle or frying pan over medium heat. Cook until browned on both sides.
  8. Makes 18-20 large pancakes.
