Chive & Onion Greek Yogurt Dip

Serves: 1½ cups
- 1 cup chopped purple and white onions
- ¼ teaspoon salt
- ¼ cup water
- 1 teaspoon balsamic vinegar
- 1 cup Greek yogurt (can use low fat if desired)
- ¼ cup 2% milk
- ¼ cup chopped fresh chives
- ¼ teaspoon fresh pepper
- Spray a skillet with nonstick cooking spray.
- Add the cup of the onions to brown on medium heat, stirring frequently.
- After 5 minutes and when the onions are translucent, add the water and balsamic vinegar.
- Reduce the heat and cook until the onions are completely caramelized which will be about 10 minutes.
- Combine the onions, yogurt, milk, fresh chives, and salt and pepper in a medium bowl and stir until thoroughly blended.
- Cover and chill for 30 minutes before serving for the flavors to set.
- Serve with pita chips or a vegetable tray.
