Healthy Peanut Butter Snack Bars
Serves: 12 servings
These Healthy Peanut Butter Snack Bars are gluten free and make a perfect high protein snack or breakfast!
  • ⅓ cup natural creamy peanut butter
  • 1 tablespoon unrefined coconut oil
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • ⅓ cup honey
  • 1¼ cup puffed rice cereal
  • 1 cup old fashioned oats
  • ⅔ cup dried fruit
  • ⅓ cup chopped peanuts
  • ⅓ cup mini marshmallows
  1. Coat a 11x7 inch baking dish with coconut oil or butter and preheat the oven to 350 degrees F.
  2. Combine peanut butter, coconut oil, honey, vanilla, and salt in a microwave safe bowl. Microwave on high for 1 minute or until bubbling.
  3. In a medium bowl stir together puffed rice, oats, dried fruit, peanuts, and mini marshmallows.
  4. Pour the peanut butter mixture over the puffed rice mixture and stir until well combined.
  5. Press into the greased dish and bake for 10 minutes, or until just set.
  6. Optional: Melt 2 ounces of dark chocolate and drizzle over top.
  7. Cool completely before cutting. Don't get impatient like me, or they'll end up crumbling as you cut. :) Store in the refrigerator in an airtight container.
