Apple Slice Snack Sandwiches Three Ways – Pep up your little scholars with this fun and healthy after-school snack in three yummy flavors that you can mix and match!
The craziest thing happened to me a couple of weeks ago. My sweet little five-year-old scampered onto a big yellow school bus with his oversized backpack and a big smile on his face. On his first day of school, he was so ready and so excited to begin the adventure known as kindergarten. When three o’clock rolled around, and with it the school bus, my son stepped off the bus – this time with a shell-shocked and just plain exhausted expression on his face. When I asked him how his first day went I got the classic “I dunno, it was okay.” As we slowly walked home I thought, oh no, did it go badly!?
When we got home the first thing my kindergartener said was “can I have a snack?” A few minutes later his snack was all but inhaled and he was back to his bouncy, happy, and very talkative self. Apparently, he had an excellent day. He was just hungry.
Since the first day of school, I’ve smartened up to the importance of the after-school snack. Snack time has become a time for my little guy to recharge and eventually tell me (in great detail) the events of the day. I can tell he feels especially important and valued when I take the time to make him a fun or novel snack. With the fall season upon us, apples have naturally found their way into snack time routine and my Apple Slice Snack Sandwiches are a huge hit!
I’ve come up with three fabulous apple sandwich combinations, so if you have more than one kid everyone is sure to find something they like.
1. Peanut Butter Chocolate Chip – This apple slice sandwich is much like the classic snack of apples and peanut butter, but it’s a lot more fun with the addition of chocolate chips!
2. Nutella, Cranberry and Coconut – Kids pretty much love Nutella with anything. The cranberries and coconut in this apple slice sandwich add a little vitamin C, fiber, and nuttiness.
3. Cheddar and Honey Ham – Apples and cheese is another healthy, classic snack. Along with the honey ham, this apple slice sandwich is sweet, savory, and satisfying.
The next time your little scholars come home from school exhausted and hungry, make them these fun Apple Slice Snack Sandwiches. They’re sure to pep them up for the rest of the day!
- 1 sweet apple (gala for example)
- 2 Tbsp peanut butter
- 4 tsp mini chocolate chips
- 1 sweet-tart apple (pink lady for example)
- 2 Tbsp Nutella
- 2 tsp shredded unsweetened coconut
- 8 tsp dried cranberries
- 1 tart apple (granny smith for example)
- 8 slices uncured honey ham
- 4 slices cheddar cheese
- Cut the apple into thin slices width wise so that the slices are a round shape. Remove the seeds by cutting a circle with a pairing knife or with a mini fun shaped veggie cutter.
- Spread peanut butter onto four apple slices and then sprinkle each with a tsp of mini chocolate chips. Create a sandwich by topping each of the four slices with another apple slice. Serve immediately.
- Cut the apple into thin slices width wise so that the slices are a round shape. Remove the seeds by cutting a circle with a pairing knife or with a mini fun shaped veggie cutter.
- Spread Nutella onto four apple slices. Sprinkle each slice with ½ tsp of shredded unsweetened coconut and then 2 tsp of dried cranberries. Create a sandwich by topping each of the four slice with another apple slice. Serve immediately.
- Cut the apple into thin slices width wise so that the slices are a round shape. Remove the seeds by cutting a circle with a pairing knife or with a mini fun shaped veggie cutter.
- Stack two slices of honey ham and 1 slice of cheddar cheese onto four apple slices. Create a sandwich by topping each of the four slices with another apple slice. Serve immediately.
