I’ve had a tonne of people emailing me about the recipe for this yummy salad, so as requested, here it is:
CAFE RIO SWEET PORK
1 (3-5 lb) pork roast – boneless pork loin
1 cup salsa (use Pace Picante sauce)
1 cup brown sugar
Place ingredients in greased slow cooker. Cover and cook on low heat for 8-10 hours. Shred pork with fork. Keep lid off after shredding for about 15 min so juice will thicken.
LIME DIJON DRESSING
1/4 cup fresh lime juice
2 Tbsp olive oil
1 tsp Dijon mustard
1-2 Tbsp honey
1 garlic clove
Salt
Blend all ingredients together
ARROZ VERDE (green rice)
1/2 c. tightly packed cilantro
1 cup tightly packed spinach
1 1/4 cups chicken broth
1 1/4 cups milk
1 tsp salt
1 Tbsp olive oil
3 Tbsp unsalted butter
1 1/2 cups rice
1/4 cup finely minced onion
1 clove garlic, minced
Put cilantro, spinach and broth in a blender and blend until pureed. Add milk and salt and blend till well combined. Heat Olive oil and butter in a large saucepan. When melted add rice and saute till brown (3-4 min, stirring). Add onion and garlic and cook for 1 minute stirring. Add cilantro-spinach mixture, stir well, bring to a boil Cover, tunr heat to low. Cook 20 minutes. Stir rice carefully, cook for 5 more minutes. Take pan off heat and let rice steam in the covered pot for 10 minutes.
These were the main ingredients in my taco salad, along with tomatoes, grated cheese, lettuce, fresh salsa and tostitos multigrain taco chips (my favorite thing at the moment!).
The kids love this in tortilla shells and I love throwing the leftovers together to make a quick taco salad. Enjoy!

Tried your applesauce muffins and chocolate banana muffins last week and they were both a hit. As much as I love chocolate, I almost like the applesauce muffins just a bit more. Surprises me, too. I’d like to try this recipe, also. Thanks for sharing your yummy recipes!

That all sounds so yummy. My split pea soup dinner doesn’t seem as appealing after reading this.
