My parents arrive tommorow night for a week long visit and I can’t even tell you how excited we are to see them! I have a few posts scheduled to go up this week including a fabulous giveaway this Wednesday! While my parents are here I’ll likely check in a couple times but will be MIA until next week.
Just popping in to share this yummy recipe today, it’s one of our family’s favorites! (I found it on a food blog quite a while ago & I can’t remember where now, ooops.)

Chicken Tetrazzini
1 box noodles
2 cooked and chopped chicken breasts
½ cup shredded zucchini
½ cup shredded carrots
½ cup chopped onion
3 tbsp butter
1 tbsp minced garlic
1 can cream of chicken soup
½ cup sour cream
½ cup milk or cream
½ cup parmesan cheese
Salt and pepper to taste

While the noodles are boiling, melt butter on a low heat in a frying pan. Add garlic, onion, zucchini and carrots. (If you peel the zucchini before grating it the kids won’t even know it’s in there…wink, wink). Saute for about 3 minutes. Add soup, sour cream, milk, cheese and chicken. Stir over low heat, until noodles are done boiling. Drain noodles and add to the mixture.
Toss well and serve immediately.

This is very similar to a recipe we make, but we bake ours with cheese!
