E-Mealz Giveaway! *giveaway now closed*

Wednesday, April 20, 2011

Today’s giveaway is sponsored by E-Mealz, an online menu planning service that offers menu plans for busy moms or wives.

Founded by sisters Jenny Cochran and Jane Delaney, the goal of E-Mealz is to provide:

Delicious family friendly recipes

Ingredients bought on special and/or at the best price available

An easy and stress free home-cooked dinner

E-Mealz relies on a team of experienced meal planners, writers and editors to create new dinner menus every week that are designed around grocery store sales, seasonal specials and diet preferences. For $5.00 per month, subscribers download a recipe plan for the week with a matching aisle-by-aisle grocery list. The easy-to-follow recipes usually contain fewer than seven ingredients to allow for prep times of less than 30 minutes.  It also helps families stay within a predictable budget by being prepared with a detailed list to use at the grocery store.

You can visit the E-Mealz blog for recipes, tips on how to simplify your life, organize your days, and plan family fun.

Our  family had the pleasure of trying out E-Mealz over the past few weeks & we loved several of their fabulous recipes. Living on a small island I was worried I might have difficulty finding some of the groceries for the recipes in the menu plan we chose {low-fat, any store} but I was thrilled to find that the weekly menu plans were filled with everyday, easy to find ingredients, included simple, family friendly recipes & they were delicious to top it all off!

Our family’s favorite recipe was the fat free Chalupas with Beans + Rice. They were a big hit with mom, dad AND the kids and we all know that’s not always an easy thing to manage!

Fat free Chalupas with Beans + Rice
{recipe from E-Mealz}

8 taco sized flour tortillas
Fat Free cooking spray
15 oz can Fat Free refried beans, heated
2 – 6 oz box Mexican rice, prepared according to package
½ bag shredded lettuce
8 oz shredded 2% fiesta blend cheese
1 c Fat Free sour cream
1 tomato, chopped {me & my hubby used black bean + corn salsa}

Spray tortillas with cooking spray. Bake in a single layer at 350 til crisp. Spread a thin layer of beans over each tortilla. Top with desired amount of rice. Top with lettuce, cheese, sour cream, & tomato. Serve with sliced watermelon.

    My families favorite go-to dinner is breakfast burritos. I make a bunch of them ahead of time and freeze the extras in foil, then just pop them back into the oven when needed. Using egg, chicken or turkey sausage, fat-free beans, low fat cheese and mild salsa they are filling, delicious and the kids don’t have to worry about too much “bite”.

    Homemade chicken pot pie. I’m a terrible “plan ahead” dinner planner but my girlfriend showed me a quick and easy recipe! It’s so good. So EASY! When you’re preparing, it makes enough for two pies, so the second night, you just toss in the oven and eat!

    Our go to meal is Salsa Chicken Wraps – grilled chicken breasts (usually from Costco, already cooked and stripped) cooked in fresh salsa in a pan, served over Romaine Lettuce leaves. Me and hubby eat it just like that (we need to) and the kids add shredded cheese and a dollop of sour cream. YUMMY!

    One of our favorite go-to meals – and the meal I make when I’ve grocery shopping and then don’t feel like making a big dinner 😉 – is Taco Salad.

    Shredded lettuce, frito chips, cooked ground turkey w/ taco seasoning, chopped carrots, tomato and other veggies, shredded cheese, and dressing (we like Thousand Island). Very quick and good!
