These yogurt pancakes aren’t anything fancy, but what they lack in fancy they sure make up for in taste! We love to eat these little pancakes Christmas morning served with homemade buttermilk syrup.
Yogurt Pancakes
1 cup plain yogurt
2 egg yolks
1 square of melted butter
¾ cups flour
1 Tbsp sugar
½ tsp salt
2 egg whites

Mix all ingredients and lastly, fold in egg whites.  Prepare pancakes on grill, before flipping put 3-4 thin slices of banana on the top of each pancake, then flip and cook other side.

Buttermilk Syrup
½ cup buttermilk
½ cup margarine
½ tsp baking soda
1 cup white sugar
1 tbsp white corn syrup
1 tsp vanilla

 
Boil all except vanilla for five minutes. Remove from heat and add vanilla.
Serve over yogurt pancakes.

    Sounds yummy! But, how much is a square of butter? I am “googling” it and see anything from 1 Tbsp to 1/2 cup!

    So this morning, I decided to try your recipe, and by far, both my husband and my son decided this was a keeper! I also enjoyed it too! My question to you is…. how many times do you double, tripple this recipe to feed your family of 6?
    This recipe will definitely be used often! Thanks for sharing!

    ooohhh i’m liking the sound of these! what is the consistency like inside? i make pumpkin pancakes which i love a lot but the texture inside is sort of creamy, almost like they aren’t done….

    I’m pretty sure it’s 1/2 a cup but we ended up using less. Sorry for the confusion. 🙂
