I don’t know what has come over me the past few days but I have been baking up a storm! It comes in spurts and last week was the week to bake I guess. I did a huge batch of chocolate chip cookies the other day, made some yummy dinner last night – roasted chicken, garlic mashed potatoes and veggies. And the other morning I got adventurous and used up some over ripe bananas and did a double batch of banana chocolate chip muffins. Always a favorite of mine growing up – now a favorite of our little family as well. Emily and Carson enjoyed them. A lot! Me, I love them. There’s chocolate in them – what’s not to love?
I thought I’d share the recipe if you’re interested.
BANANA CHOCOLATE CHIP MUFFINS
1 3/4 cups flour
1/2 cup sugar
3 tsp baking powder
1/2 tsp. salt
1/2 cup chocolate chips
1 egg
1/4 cup vegetable oil
1/4 cup milk
3 mashed banana’s
bake at 375 F for 15 minutes
So let’s see. What else have we been up to? Besides baking. Cleaning. Thinking about scrapbooking – haven’t done any actual scrapbooking in a few days. But I will be getting to it today. Carson’s napping and I’m gonna go crazy! Scrap my heart out! So I must run. Carson sleeps for a couple hours and the clock is ticking!
If you try those muffins out you have to let me know how you like them!
**note** the recipe calls for 3 teaspoons of baking powder not 3 tablespoons. 3 tablespoons of baking powder would be A LOT of baking powder. Just making sure you read that right. Someone (and I’m not going to say who) had copied down the recipe wrong and finally called her mom the other day to make sure she had it right. She’d been adding 3 tablespoons to the recipe for who knows how long. Thought her muffins seemed a little fluffy, didn’t really think muffin dough was supposed to rise…but obviously isn’t a real pro with the baking and just thought it was normal. So 3 teaspoons. Just remember that.

I had 3 ripe bananas and a playdate to host tomorrow morning, so I tried your recipe. The muffins came out of the oven a little while ago, and I sampled one – it’s delish! Did you use a mini muffin pan for yours? I cooked mine for a little longer, because I used the regular size. Thanks for the recipe!

So glad you liked them Susie…and yes I did do mini muffins. I did some of each actually and I think I had to bake the bigger ones a little longer too. I always just set the timer for 15 and then check ’em and see how they’re doing. 🙂

Banana Chocolate Chip muffins were my favorite until I tried these…
DOUBLE Chocolate Banana Muffins
1 1/2 cups flour
1 cup sugar
1/4 cup baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1/4 teaspoon baking powder
1 1/3 cups mashed ripe bananas
1/3 cup vegetable oil
1 egg
1 cup (6 ounces)semisweet chocolate chips
In a large bowl, combine the first six ingredients. In a small bowl, combine bananas, oil and egg; stir into dry ingredients just until moistened. Fold in chocolate chips. Fill greased or paper-lined muffin cups three-fourths full. Bake at 350F for 20-25 minutes or until muffins test done.
