This simple and beautiful Strawberry Spinach Salad is delicious, healthy, and perfect for all your summer gatherings!

Hello! Tiffany from Feel Great in 8 here again. I’m excited to be back sharing this simple and delicious summer salad recipe!

I LOVE summertime! Does anyone else feel like it is slipping by too quickly? I’m trying to soak up as much sunshine, spend as much time outdoors, and enjoy as much fresh summer produce as I can. This gorgeous salad absolutely screams summer. The bright beautiful colors make it the perfect salad to take to all your summer gathers and, trust me, it is always a hit!

There are also some delicious variations you can do with this one. I love spinach, but you can definitely use your favorite greens, you can add chopped purple onion or some crumbled feta cheese, and we love it with raspberry or strawberry vinaigrette {you can find the recipe for my absolute favorite right here} or even a poppyseed dressing.  I’ll put the basic recipe below, but feel free to make it your own!

Strawberry Spinach Salad

Serves: 4 servings
Ingredients
  • 6 oz baby spinach leaves
  • 1½ cups strawberries, sliced
  • ¼ cup sliced almonds
  • ¼ cup crumbled feta cheese
  • strawberry vinaigrette or poppyseed dressing to taste*
Instructions
  1. Wash all of the fresh produce thoroughly.
  2. Toss together all of the ingredients except the dressing.
  3. Add your favorite dressing and toss to coat evenly just before serving. Don't make this one too far ahead, or the spinach will wilt.

Spinach, sliced peaches, feta cheese, and poppyseed dressing

Arugula, grapes, sunflower seeds, salmon, and mustard vinaigrette

Mixed greens, chicken, avocado, tomato, and homemade skim milk ranch dressing

Tomatoes, cucumber, red onion, olives, feta cheese, and olive oil

Butter lettuce, tomatoes, bacon, corn, avocado, feta cheese, olive oil, and lime juice
