I’ve had the ingredients sitting around to make these squares for a little while now and was happy to finally have an excuse to make them the other day. These sweet lemon squares were a favorite growing up and one of my Grannie’s specialties. No one can make them quite like she does! My mom thought maybe the recipe originated from the label on a can of Eaglebrand milk, but wasn’t quite sure. Either way….we’ve been enjoying them in my family for years and now you can enjoy them too! 🙂
Lemon Squares
……………………………………
1 can eaglebrand milk
12 graham crackers
½ cup lemon juice {fresh/bottled or mixed}
1 tsp grated lemon rind
1 cup lemon icing
……………………………………
Blend condensed milk, lemon juice and lemon rind until thick. Layer bottom of a 9 X 9 inch pan with graham crackers. Pour a layer of milk mixture over top. Continue layering milk mixture and graham crackers.
Top with lemon icing.
Lemon Icing
……………………………………
1/4 cup soft butter
1 cup icing sugar
1- 2 tsp lemon juice
1-2 cups icing sugar
1-2 Tbsp milk
……………………………………
Cream 1/4 cup butter with 1 cup icing sugar. Gradually beat in 1 – 2 tsp lemon juice to taste.
Beat in remaining icing sugar. If needed, add milk until desired consistency.
Add a few drops of yellow food coloring and mix until blended.

So I’ve gotta ask…what is that adorable font you used for “lemon squares”? Love it! 🙂

I have a crazy question, is icing sugar the same as powdered sugar?
Thanks!
Thanks for sharing. Will try these as soon as I’m home from a cottage/camping vacation. I’m a bit confused about number of graham crackers. 12 doesn’t seem enough to make the pictured 4 layers in that size pan. Graham crackers here in Ottawa, Canada come in squares not rectangles; maybe I need 24 squares? Did you double the recipe by any chance?
just read your guest post at Whipperberry.I don’t feel so bad about the dished in the sink right now. Rather be with family…
I love anything with lemon!
These look amazing!! I just found your blog today and I can’t wait to look around more! I am definitely going to try these soon!
@Brenda
Brenda, the graham crackers I used were rectangular, so double the size you’re thinking of but I did double the recipe for a 9X13 pan. I’d have a box of graham crackers handy in case you need extra. 🙂
Hi Rebecca,
I got a question what kind of crackers are the Graham? Here in Germany I could not find the Graham cracker. Can you think of any cracker that might be similar that I could use? Or are they just wholegrain cracker?
Thanks alot…
just found your blog, love the recipe and you have a BEAUTIFUL family!
@Nina
They’re a sweet cracker Nina….the same kind you use to make s’mores? Here are a few links for you, hopefully they’ll help:

Rebecca…we made these and my boys loved them! Thank you!
Rebecca, I am going to make this for a bridal shower that is tomorrow. I’m wondering if I can make it ahead today, or if it would be soggy/mushy if I made it ahead. Thoughts? Thanks!
@jkhenson
so sorry to just be replying, I’ve been away for the weekend. You would be totally fine to prepare them the night before, they’re actually better the next day! 🙂
What is icing sugar? Powdered sugar?
Is icing sugar powdered sugar?

These look so delicious & easy! Perfect for our simple Easter brunch this weekend. Thanks for sharing!
These look so good and really pretty. I love beautiful food. Thank you for sharing this recipe. My husband loves anything lemon.
Should this be refrigerated for some time before serving?
yes, they should be refrigerated and are best served next day…you want the graham crackers to soften so they need to be made ahead. 🙂
So pretty!
