Chicken Bacon Ranch Pasta Salad with Creamy Greek Yogurt Dressing – This tasty pasta salad is the perfect side dish for your next Summer get together! The best part is the greek yogurt dressing is low in fat, high in protein and has fewer calories than traditional dressing!

Summer is about family! It seems like there’s always a family backyard BBQ or picnic to attend throughout the Summer months and I wouldn’t have it any other way! One of my favorite things to bring to these memorable get togethers is a hearty pasta salad. I’ve got a go-to pasta salad recipe, but this Summer I wanted to branch out and try something a little different.

Hidden Valley Greek Yogurt Dressing Mix was just introduced to me and I picked up a packet on my last grocery run at Walmart. Greek yogurt is a healthier alternative to sour cream and I was excited to give this dressing mix a try!

Ingredients
  • 1 lb box rotini pasta
  • 8-10 slices of bacon, cooked and chopped
  • 1½ C. cooked chicken, chopped
  • 1½ C. peas
  • 1½ C. grape tomatoes, sliced
  • 1 C. carrots, chopped
  • 2 cloves garlic, minced
  • Dressing:
  • ½ C. milk
  • 1⅓ C. plain greek yogurt
  • 1 Packet of Hidden Valley Ranch Greek Yogurt Dressing Mix
Instructions
  1. Cook pasta according to package directions, drain and set aside to cool.
  2. In a small bowl whisk together greek yogurt and milk.
  3. Stir in greek yogurt dressing until everything is evenly coated.
  4. Once pasta is cool place in a large bowl. Pour in peas, chopped carrots, garlic, sliced tomatoes, bacon and chicken.
  5. Pour dressing in bowl and stir until everything is evenly coated.

A few Quick Tips

  • To make things really easy I purchased a rotisserie chicken for this recipe. It made it quick and easy to chop and add the already cooked chicken to the salad and I had plenty leftover for another meal.
  • If after adding your dressing to the salad you’d like a creamier texture add a tbsp of milk. Add milk until you get the desired consistency.
  • After refrigerating salad overnight you may want to add some extra dressing before serving as it may dry out a little bit.
  • This makes a large batch so it’s perfect for feeding a crowd.

One of the things I love most about pasta salad is how easy it is to change it up to suit your taste. You can follow the recipe that we used or throw in a few of your favorite veggies! I think adding corn, red onion or avocado to this salad would be delicious!

We had this for lunch today served with some cheesy garlic bread and it delish! We added a little more milk because we like the dressing nice and creamy, but other than that I love how hearty this salad is! It filled us right up and it’s jam packed with healthy veggies! It’s refreshing, full of flavor and perfect to take to your next Summer get together!

    Using yogurt instead of mayo is a great idea, much healthier, sometimes fatty dressings can ruin otherwise really healthy meals.
