I like to have a few recipes up my sleeve that are impressive, yet incredibly easy. These Blender Chocolate Pots fit the bill. They take minutes to prepare and are going to make the chocolate lovers in your life very, very, happy. They do need to chill to set up, so start them a few hours or the day before you are going to serve them. Want to see how I made them? Let’s go!
(Edited to add – the hot milk cooks the egg, but if you are uncomfortable you can use a pasteurized egg instead.)
Ingredients:
- 2/3 cup whole milk
- 1 1/4 cup semi-sweet chocolate chips
- 1/4 cup sugar
- generous pinch salt
- 1 egg
- 1 teaspoon vanilla
- whipped cream (optional)
- raspberries (optional)
Bring milk to a simmer. Do not let the milk boil.
Add chips, sugar, and salt to a blender.
Pour the hot milk on top of the chocolate mixture.
Let stand for 1 minute, the chips will begin to melt.
Run for another minute, until the chocolate is perfectly smooth.
Pour in egg and vanilla while the blender is running. Blend until incorporated.
Pour into small ramekins or espresso cups. These are really rich, a little goes a long way.
Chill for a few hours until set. Top with whipped cream, raspberries, and a dusting of powdered sugar if desired.
