I love jotting down a few of my favorite quotes as I listen to the talks and instead of doing that in a notebook like I did when I was younger, my notes have taken on a more digital approach in recent years.

Hey Guys! I’m Shannon, lover of fresh bread, expert bargain shopper, stripes enthusiast, and blogger over at I Knead to Bake! While my husband Tyson finishes his Bachelor’s degree I spend my days chasing after our two girls, experimenting in the kitchen, and trying to make our house a home. Today I’m excited to be sharing a recipe with you inspired by my three year old, affectionately referred to as monkey girl. She has a love affair with cake and sprinkles, or “frinkles” as she would call them.

I love this recipe because it’s a sweet little treat that I know my girls are sure to devour, yet the batter is totally free of refined sugar and includes wholesome ingredients like whole wheat flour, coconut oil, and greek yogurt.

So friends, grab your “frinkles” because we’re baking cake!

Lightened-Up Mini Yellow Cupcakes
Adapted from: Wholesome Chocolate Cake
Yield: About 40 mini cupcakes

Ingredients

½ c + 2 Tbsp white whole wheat flour
½ c. all-purpose flour
1 tsp. baking powder
½ tsp. baking soda
¼ tsp. salt
6 Tbsp. coconut oil, melted
½ c. raw honey
¼ c. pure maple syrup
2 eggs
¼ c. plain greek yogurt (or naturally sweetened vanilla)
2 Tbsp. unsweetened applesauce
1 tsp vanilla extract

Directions:

Begin by preheating your oven to 325 degrees Fahrenheit. Line a mini cupcake tin with paper liners and set aside.

In a medium bowl combine flours, baking soda, baking powder and salt. In a separate large bowl add melted coconut oil, honey, and maple syrup. Whisk until combined. Next, one at a time, add each egg and continue to mix. Finally add the yogurt, applesauce, and vanilla extract.

Bake for 12-14 minutes or until the cake springs back when lightly touched. Allow cupcakes to cool and the frost with chocolate hazelnut spread and coat with sprinkles.

5 Ways to Stay Organized and Productive Using Technology

Have you discovered the home- and life-management systems that help your world run smoothly?

You know the systems that I’m talking about—the ones that work so well for you that you never have to make yourself do them, because you actually want to!

I’ve found that through trial and error and by taking detailed mental notes on what really works for our family, I’ve slowly arrived at systems that make life simpler and leave more room for the things that matter most.

And, as I’m sure is the same for you, technology is often the cornerstone of my most simple but effective systems.

As a mom, home manager, blogger and photographer, I couldn’t stay on top of everything without the technology features that I’ve come to rely on. Because I always enjoy hearing about technology hacks that my friends are using, I thought I’d share five of my most relied-on features with the hope that you’ll get a new idea or two. Enjoy!

Keep an online family calendar. I’m continually adding events and tasks to our family calendar using Google Calendar. What I appreciate most about it is that it syncs to my phone as well as my husband’s, which means we’re both aware of the family schedule at all times.

I also refer heavily to our online calendar when filling in my daily to-do list, and when I unpack backpacks, I immediately add school events and assignment due dates, which allows me to throw out paperwork and keep clutter under control. Plan weekly menus using Pinterest. Every Sunday night, I take some time to review my calendar for the week and plan a simple menu. I’m not perfect at it, but when I do get 3-4 meals and our grocery list planned out, it helps SO much! Pinterest is an incredible tool for menu planning. When I want to try something new, all I have to do is scan my dinner board for new ideas, and I always choose a couple of tried-and-true family favorites from the Simple As That Recipes board.

Utilize tethered shooting. This tip is key for anyone who regularly works with photos. While I’m relatively new to tethering, it has already made a huge difference in my photography work flow. With my camera connected to my laptop while I shoot, I can see my photos in real time, make adjustments to my setup, re-shoot and delete as needed. I’ve noticed I’m able to work much more quickly and efficiently.

The tethering equipment I use includes:

  • Manfrotto MT 055 XPRO
  • Manfrotto Action Ball Head
  • Tether Pro Cable
  • Adobe Lightroom

Move photos between devices. While we’re talking about tools for photographers, Air Drop is such a handy feature for professional photographers and moms alike. I often need to move images from my iPhone to my laptop, so I can use them for blog posts or add them to a photo book. Apple’s Air Drop feature saves me the extra steps of emailing them to myself or using jump drives to transfer files.

Use time more efficiently. As a mom, my day is often divided into 10-15 minute increments, between snack time, driving kids to practice or preparing meals. I use the timer on my phone to help me use these small windows of time wisely.

I find that if I set a timer for a few minutes—to finish up a load of laundry, do a quick tidy in the kitchen or return a handful of emails—I’m much more efficient. And the fact that I can start and finish one task in a given period feels great. These few-minute tasks may seem small, but they add up at the end of the day! 

I love Albert Einstein’s words, “Out of clutter find simplicity.” It’s exactly what I’m going for, and I bet you are too.

When I first started my fascination with photography years ago I was completely shooting from the hip. I mean that figuratively of course, but one thing is for sure I knew nothing about the technical aspect of photography. When I saw something I liked, I took a photo. It seemed pretty straight forward…right? Well, yes and no. Let me explain.

As Moms, we want to capture our family's everyday story. The easiest and most convenient way to do that is with the camera in your back pocket: your phone! Learn everything you need to strengthen your skills as a mobile photographer. In one week we’ll move beyond taking snapshots to capturing magical moments with your phone.

Composition is Key

When a photo looks good to you, there may actually be a reason behind it. That reason is called composition. Simply put, composition is the visual elements of a photograph, such as the placement of objects, subjects, focal points, and layout of the overall photo.

One of the easiest ways to improve your photography is to apply the rule of thirds when shooting. Come learn more about this fundamental principle of composition.

Sometimes you may take your photo, have amazing composition and not even realize it, you just know it looks good. This is the whole point. Good composition is pleasing to the eye. It looks balanced. Herein lies the rule of thirds.

The Rule of Thirds

The rule of thirds is applied to a photo in terms of dissection. Take 2 vertical lines, and 2 horizontal lines and divide your photo up into 9 equal squares. Like this:

The goal in using the rule of thirds is to place your subject, or the focal point, along a vertical or horizontal line and a point of intersection.

When applied to a photo you can see the difference in the examples below.

When a photo lends itself to a more centered look, you can still apply this rule by keeping the focal point (her eyes in this shot) along both a horizontal line and their vertical intersections:

When shooting landscapes, try not to cut your photo in half by placing the sky and ground in the center of the photo.

Remembering the rule of thirds may be hard to apply when you’re in the middle of capturing that perfect moment, but no worries. For a little assistance you can add a grid to your DSLR in your camera settings and even on your phone when shooting with the Instagram app.

You also have the option of adding a grid during your edit sessions in Photoshop by going to:

View>Show>Grid

Then adjust the settings of your grid:

Edit>Preferences>Guides, Grids. (Adjust the ‘Gridline Every’ to 100% , ‘Subdivisions’ to 3)

Overall, using the rule of thirds will help you achieve better composed photographs, but don’t be afraid to venture outside the realm. Finding what you love, and looks good to you will be part of your photography journey and the rule of thirds is simply there to guide you.

Spring is here and I couldn’t resist a new version of our simple and oh-so cute treat cups! Paper cups come in such a wide range of colors and are available at craft stores, party supply shops or the dollar store. I always have them on hand because they’re so fun to craft with.

Simple Easter Treat Cups – quick and inexpensive fun for the kids this Easter season! These cute cups are perfect for party favours, classroom treats and double as an easy Spring craft!

My kids love making these little treat cups with me and they’re so easy and inexpensive – they’re perfect for Spring crafting!

What you’ll need to make your own Easter Treat Cups

  • White, yellow, teal and orange paper cups
  • Black sharpie
  • Small and medium size pink pom poms
  • Scissors
  • Ribbon or twine
  • Colored cardstock/construction paper
  • Cellophane bags
  • Gluesticks

We made a few different versions of these Easter treat cups – a bunny, a chick, a bluebird and a carrot. Pick and choose your favorite or make them all!

Bunny Cups

Start with a white cup. Draw your eyes on or use goggly eyes – they’re always fun!

Draw your bunnies mouth on the front of the cup then attach a small pink pom pom in the center for a nose.

On the back of the cup attach a medium side pink pom pom to the center for the bunny’s tail.

Now for the ears. To make the bunny’s ears cut the desired shape from white cardstock.

Next, cut out the same shape but slightly smaller out of pink paper.

Glue both papers together, then attach to the inside of the cup.

Chick Cups

To make the chick, simply draw the eyes on with black sharpie or use googly eyes.

Cut a small diamond shape out of orange cardstock.

Fold in half and attach to the center of the cup. Next, using orange paper, cut out feet for the chick.

Hint: fold your paper in half and cut both layers so you can cut out both feet at the same time.

Attach the feet to the bottom of the cup.

Bluebird Cups

To make the bluebird repeat the same steps as you did for the chick using a blue cup instead of a yellow one.

Carrot Cups

This cute little carrot is so easy to make it’s ridiculous. All you need to do is draw a face on an orange paper cup.

Next cut out 3 skinny strips of green paper. attach them to the inside back of the cup for the carrot’s stem and you’re done.

I chose to use Spring colored tootsie rolls in our cups – they had just the right colors to coordinate with the cups I chose, but any snacks/treats will do!

Beautiful Easter egg decor - techniques for hand lettering on eggs

Hi there, this is Annika from Annika Olsson Photography. Can you believe that the end of March is closing in and it’s almost Easter!? I have been secretly looking forward to this holiday since we moved ito our new house late last spring. This season symbolizes so much to me; growth, colors and the endless excitement and inspiration I feel, whenever I see life blossom and recreate itself.

The project I have for you today has been in the making for quite a while. You see, the first thing we built here after moving in, was a chicken coop because we were so excited about the idea of having fresh eggs every day. Since I love to do research, that of course became part of the ‘chicken buying project’ and when I learned how many different colors eggs naturally come in, I was over the moon. I knew exactly what I wanted; to go out every day and not only collect a handful of nourishment, but a handful of colorful little wonders.

We have, for the last 8 months, been receiving 4-5 eggs daily, in four different colors, and I still get as excited as the day we got our first egg.

In my first post here on the blog, Nursery Wall Decor, I talked about the ability to create something new from scraps and found objects. In this project we are going to do just that again, but with eggshells. I think these babies are way to pretty to waste, plus eggshells are such a fun object to use for crafting and decorating, and now that Easter is coming, it’s the perfect project.

Since I love lettering, I thought that would be a fun theme for this egg decor. I’m not so confident with doodling (have you seen some of the egg doodling projects out there? They are gorgeous!) Anyway I felt this was more up my alley, all-though I’m pretty new to lettering. I do believe that in every new project, there’s room for improvement, so I might just learn something myself.

So let’s get started on some egg lettering! You’ll need the following materials to complete this project:

1. Pencil, eraser, & pigment ink pen.
(i used a white one, but feel free to use any color of your choice)

2. Print-out of letters/text for reference.
Some of you might be really awesome at lettering without any reference, but if you are (like me) not so comfortable yet, reference material is the way to go. You could use books or anything that has type on it, but it’s nice if you can print/scan it, to get a physical copy. This way you can make some test sketches on it, to be more sure of your strokes. Sometimes it’s hard finding good references, and books can be expensive, so I’m gonna share with you, THE MOST AWESOME PLACE on the internet for referencing and inspiration on lettering, type and graphics:

May I present to you, the Internet Archive.
This place has digitized millions of free books, including several on the above topics. Now before you rush off to spend countless hours browsing a vast land of information, I’m going to point you towards a few books, that are really awesome for this particular project. Also, the really cool thing about these books is, that you can download them as PDF’s, or just save and print individual pages while flipping through online.

3. Eggs (“blown out”), store bought or maybe your own, dyed or as is.
There are tons of tutorials on how to blow out eggs. Just have a look at this Pinterest search (I chose a nasal aspirator, which made it very easy). As I told you in the beginning, the colors on our eggs are just gorgeous, so I didn’t have to color them. But if you need to, there’s quite a few natural egg dyeing tutorials on Pinterest to choose from.

Now that we have everything ready, we are going to do some lettering. Follow the steps in the picture below to create your own awesome Easter eggs.

Hopefully you now have a bunch of gorgeous lettered eggs, ready to decorate your home for Easter. I put all of mine in a big glass jar with some broken shells and some feathers. I really like the look of that. I also made a snapshot of all the eggs and turned it in to a simple Easter card. You can download it here:

For those of you considering making Easter Eggs, but dislike the hassle of using fresh eggs, these craft Easter eggs are a fun and creative solution for Spring.

Craft Dyeable Easter Eggs, the perfect holiday craft with the kids.

Hello….I’m Nicole! I co-author the lifestyle blog Simply Happenstance with my dear friend Sara.  We are excited and thrilled to be contributors to Simple As That. We look forward to sharing some of our family favorite crafts and recipes of the season.  These Craft Easter Eggs are a family favorite and the perfect creative activity to get the kids involved in.

Easter is just around the corner.  Raise your hands if you find decorating for the spring to be challenging? Once we have packed away the Christmas decorations, I am spent on decorating for the spring.  What makes this harder for me is that I should be completely motivated to go all out for Easter as I delivered my daughter on Easter Sunday the year she was born, which makes these decorative eggs all the reason to decorate for spring.

Fun Dyeable Easter Eggs

These Craft Easter Eggs are completely easy to make, and what makes them fun is that you can be as creative as you want with them.  All you need is the following:

1-2 boxes of Easter Dyeable Craft Eggs- purchased at Michael’s.

Food Coloring 

White Vinegar

Disposable plastic cups

Chalk Board Markers

Sharpies

Stickers

Egg dye for craft eggs.

First I placed two drops of food coloring at the bottom of 8 small plastic cups.  I gave each of my kids the chance to be able to dip their eggs in four different colors without fighting over their dipping stations.  I filled the cups each with a half cup of white vinegar.

Next is similar to dying real eggs, dunk them in the dye and let them sit for a couple minutes until they are the color that you want. These eggs take a little longer as the material is not as porous as real eggs.

The Craft Easter Eggs do come with some decals and egg dipper tools, but my daughter and son decided they wanted to for go the plastic dippers and use disposable gloves so that they could dunk their eggs in the dye with out losing their eggs…remember that always seems to be the frustrating part of dying Easter Eggs.

Once you are done with coloring the eggs, place them back in their egg crates and let them dry.  I rotated the eggs between drying times as to let the dye evenly coat the Craft Easter Eggs.

Crafty Dyeable Easter Eggs

After the eggs are dried, we colored them with fun dots and simple Easter sayings as well as our names.  Really it’s SIMPLE AS THAT.  Let your creative juices flow with this fun spring project.  The best part of all is that these eggs don’t go bad and they don’t break!  You can place them in a decorative vase or bowl to display for Easter.
