Hello, Simple As That Readers! I’m Kathy from Penney Lane (Penney is our last name- no relation to JC Penney- so my website name is a play off of that and the classic Beatles song). A big thank you to Rebecca for inviting me to share a recipe on her beautiful blog! Now about that hotel room….we have been living in a hotel room for 31 days and counting now (with a 3 and a 5 year old- wowzers!) awaiting the new Penney Lane homestead to be completed.

Finding recipes to make in a hotel suite is a challenge to say the least. I have a slow cooker and I have a hot plate burner and microwave. Flashback to college dorm room days. Sometimes I also make things that are more “assembling” than cooking and pair the recipe with something simple like a soup or sandwich for a meal. That’s what I did with this easy and tangy Chive and Onion Greek Yogurt Dip. Other than caramelizing the onions, it’s a mix and serve recipe! It’s cool and creamy, perfect for serving at summer parties or for a light snack!

Easy appetizer dip made with Greek yogurt and caramelized onions and chives.

Recipe type: Appetizer
Serves: 1½ cups
Ingredients
  • 1 cup chopped purple and white onions
  • ¼ teaspoon salt
  • ¼ cup water
  • 1 teaspoon balsamic vinegar
  • 1 cup Greek yogurt (can use low fat if desired)
  • ¼ cup 2% milk
  • ¼ cup chopped fresh chives
  • ¼ teaspoon fresh pepper
Instructions
  1. Spray a skillet with nonstick cooking spray.
  2. Add the cup of the onions to brown on medium heat, stirring frequently.
  3. After 5 minutes and when the onions are translucent, add the water and balsamic vinegar.
  4. Reduce the heat and cook until the onions are completely caramelized which will be about 10 minutes.
  5. Combine the onions, yogurt, milk, fresh chives, and salt and pepper in a medium bowl and stir until thoroughly blended.
  6. Cover and chill for 30 minutes before serving for the flavors to set.
  7. Serve with pita chips or a vegetable tray.

We still have about 3 weeks left in the hotel until our house is completed (including 10 days in Ireland. We go big or go home! Haha!) so we will definitely be making this simple and delicious Greek Yogurt dip again. The cool yogurt and the tangy onions goes well with a warm soup for a simple supper. I will be sharing more hotel room recipes, our Ireland trip, and progress on our country house at Penney Lane this summer. I hope you will stop by. Don’t mind the construction dust! 🙂
