I feel silly blogging about our Christmas now that its already nearing the end of January. But I’m still going to. I keep hoping I’ll eventually catch up on blogging, laundry and my sleep but I’m not going to hold my breath. Such is life right now.
We had a really fun Christmas here at home. My family was all able to come and it was so nice to all be together Christmas morning. My Grandparents (my mom’s mom and dad) live next door to us and they were with us as well. It was my first time hosting Christmas dinner and I’m happy to report it tasted not so bad.
I didn’t get a lot of pictures from Christmas…I just wanted to sit and enjoy more than I wanted to take photos but I did get this one of my sister Ashley and Addie that I love.
Here are a few favorite recipes I wanted to share from our Christmas.
our yummy breakfast
YOGURT PANCAKES
1 c. yogurt
2 egg yolks
1 square of melted butter
3/4 c. flour
1 tbsp sugar
1 tsp baking soda
1/2 tsp salt
2 egg whites
mix ingredients then fold in egg whites. pour pancakes, slice bananas and place on top then flip. these pcakes are sooooo yummy and are even yummier topped with….
BUTTERMILK SYRUP
1 c. butter
1/2 c. buttermilk
1 c. sugar
1 tsp vanilla
1 tsp baking soda
combine butter, buttermilk and sugar in saucepan and heat slowly to dissolve sugar. add vanilla and baking soda, stirring to combine. serve warm.
some delicious treats
TURTLE BARS
Crust:
2 c. flour
1 c. brown sugar
3/4 c. butter softened
mix all of above ingredients together then press into 9X13 pan. sprinkle 2 c. chopped pecans on top and press them in a bit
Carmel:
1 c. butter
1 1/2 c. brown sugar
3 tbsp corn syrup
bring to a boil and boil one minute. pour over pecans. bake at 350 F for 20 minutes. take out of oven and sprinkle 2 c. milk chocolate chips all over. let sit about 5 minutes and then spread softened chips to cover top. these squares….OMgoodness!

And my favorite part of Christmas dinner
SWEET POTATOES
6 c. cooked mashed sweet potatoes
mix the following ingredients together and then pour into potatoes until desired consistency:
1/2 c. white sugar
3 eggs
2 tsp vanilla
3/4 c. milk
1/2 c. butter
put in 9X13 pan. for topping mix together:
1/2 c. brown sugar
1/3 c. flour
1 c. chopped pecans
1/2 c. melted butter
sprinkle on top of potatoes and bake for 30 min at 350 F uncovered.
So we had the office closed until Jan. 2 and we decided it might be our only chance for a while to run to Utah and visit Randal’s parents who are serving an 18 month mission for our church in Salt Lake City. And you’re gonna think we’re crazy (I know my mom did! didn’t ya mom???) but we packed up Christmas night after everyone had left, caught a couple hours of sleep and left at about 2am for Utah. The kids were so good in the car….Addie proved to be an excellent little traveller. The roads all the way there were great.
It was so nice to see Randal’s parents and tour around Temple square with them and see what they have been doing since they left in September. They hadn’t met Addie yet so it was special for them to get to see her.
We ate at Crown Burger, shopped at Target, had some quick family pictures taken by Elisha, ate at the Lion House and Randal even snuck in some snowboarding. It was a great little trip and we were so impressed with how well the kids did! It made it so much more pleasant than our trip last summer…mind you Carson was under two at that time. Nuff said.
On our trip home the roads were horrible, we were so thankful to get home safely. In fact when we pulled up to the border to get back into Canada at that moment the van started making this terrible grinding noise. We didn’t know what was wrong at the time but it turns out it was one of the brakes that had somehow broken (something to do with the caliper bolts coming loose and something rubbing on the wheel rim???) We were so blessed to have made it through all the stormy weather and get so close to home before it happened.
We had a great Christmas and it was fun to get to Utah for a little while but since we’ve been back we’ve been thoroughly enjoying staying home and just getting back into our regular routine.

So nice to hear about your Christmas…who cares that it’s January? I’m still trying to put decorations away and take down Christmas cards 😉 And how brave are you guys doing a road trip with three little ones! Glad all went well.
