These tasty lime coconut bars are a refreshing twist on a classic recipe! They’re the perfect mix of sweet coconut with a hint of lime and they’re so easy to make!

I’m so thrilled to welcome Bree of Baked Bree to the blog today!  I couldn’t be more excited to have her be a part of a the brand new Simple as That Contributor team! It’s truly an honor to have her sharing her amazing recipes and beautiful photos with us here on a regular basis! 

Thank you for having me Rebecca, I’m thrilled to be a new contributor to Simple As That! I’m so happy to be a part of this amazing and supportive community.

One of my favorite things to do is take a recipe that I already love and give it a twist to make it something completely different. I am famous for my lemon bars. (Truthfully, it is my mom’s lemon bar recipe, but I made a tweaks and now call it my own.) I love to make them, and they always turn out amazing. My favorite way to eat them is straight from the freezer.

So why not take that recipe and change it up a little to make something new? Taking a recipe that you know works is a great place to start. It’s easy to change flavorings and end up with an entirely new recipe. I have made lemon coconut, blood orange and vanilla bean, added fresh fruit like raspberries and blueberries. And today, a lime and coconut version. Every variation has been delicious and different from the original recipe.

A few tips:

  • Use a recipe that you have made before and know works well.
  • Changing flavorings is usually fine, but baking is science and you need to make sure that you keep the structure the same.
  • Experimenting is fun. Sometimes you hit a home run and create something incredible, and sometimes they aren’t so great. My family loves to remind me of some of the not-so-good ideas.
  • Try using what is in season and what looks great at the store. Do the raspberries looks better than the strawberries? Give ‘em a whirl.
  • Write down the changes you made and the amounts. Then you can replicate it for next time.
  • Get creative and have fun!

For the crust:

2 cups flour
1 cup confectioners’ sugar
pinch of salt
2 sticks unsalted butter, at room temperature

For the filling:

4 eggs
2 cups sugar
4 Tablespoons lime juice
4 Tablespoons flour
1 teaspoon baking powder
1 cup shredded coconut

Preheat the oven to 350 degrees.  Spray a 9×13 pan with cooking spray.

In a food processor, put the dry ingredients in the bowl and pulse.  Add the butter and pulse until it turns into the size of peas.  Press the crust into the bottom of the pan.  Bake the crust for 20 minutes. Let the crust cool for 15 minutes then start on the filling.

Add eggs, sugar, lime juice, and flour to the food processor. Run until smooth. Add baking powder and run until mixed. Sprinkle the coconut over the cooled crust. Pour the filling gently on over the crust or the crust can break.

Bake the lime coconut bars for another 25 minutes or until the filling is set. Cool completely before cutting into squares.
