Hello, Simple As That readers! I’m Rachel, a new contributor from the food blog Simple Seasonal. My blog’s title rings true in my little corner of the internet, which is full of simple and (mostly) healthy ideas for cooking seasonal whole foods. I’m so excited to join the Simple As That team and this awesome group of readers! It’s my hope that over the next year I will inspire you to give your pots and pans the loving they deserve by cooking up some easy, healthy recipes that your whole family can get behind.

Ingredients for One Pot Italian Chicken and Rice

In my home, eating healthy at dinnertime can become a battle of wills between my preschooler and myself. It’s amazing how a child who’s normally an ever-moving ball of energetic wiggles can sit and stare at a pile of spinach for an hour with stalwart determination to maintain his disapproving scowl before agreeing to give it a try (only under penalty of losing TV time, of course). I’m guessing many of you have children in your life who are of a similar disposition, so I thought I’d get things started with a recipe that has the whole family’s priorities in mind.

Making One Pot Italian Chicken and Rice

Today’s recipe for Rustic Italian One-Pot Chicken and Rice delivers on all of that. For the grown-ups it has lean protein, whole grains, lots of veggies, and creates as few dishes as possible. For the kids we have familiar and favorite Italian flavors with stretchy cheese, and, well, more stretchy cheese!  It’s one of those recipes that sneaks healthy things behind flavors that everyone loves. With a picky 4 year-old, this is a strategy I’ve come to embrace. This recipe also works as a great weeknight meal because the active cooking time is all of 10 minutes. Yeah… It takes 45 minutes to cook, but what better time to relax with a cup of tea while perusing your favorite blog. 😉

Ingredients
  • 1 Tbsp olive oil
  • 1 lb chicken tenderloins
  • ⅛ tsp salt
  • pepper to taste
  • ½ C diced sweet onion
  • 2 cloves minced garlic or ½ tsp dry
  • 1 Tbsp fresh basil or 1 tsp dry
  • 1 14.5 oz can diced fire roasted tomatoes, drained
  • 2 C low-sodium chicken broth
  • 1 C wild rice blend
  • 1 C chopped baby spinach
  • ½ C jarred chopped roasted red pepper
  • ¼ C sour cream
  • ¼ C grated parmesan cheese
  • ⅔ C grated mozzarella, evenly divided
Instructions
  1. Heat 1 Tbsp olive oil in a large oven-proof pan over medium-high heat for 1 minute. Add the chicken tenderloins to the pan and brown for about 1 minute on each side and season with salt and pepper. I recommend 2-3 tenderloins per person depending on how big of eaters you have in your home.
  2. Add ½ C diced sweet onions to the pan and cook for 1 minute, then add the garlic and basil and cook for 1 more minute. This will release and sweeten the flavors of your onion, garlic, and basil.
  3. Stir in 1 14.5 oz can of drained, diced fire roasted tomatoes, 2 C low-sodium chicken broth, and 1 C of wild rice blend. Bring to a boil, reduce to a low simmer, and cover. Cook undisturbed until all of the liquid is absorbed - about 45 minutes. This is just like cooking plain old rice. Note that you are cooking the chicken with the rice. When it's done it will be tender and full of flavor as a result.
  4. After your rice is done cooking, turn on your oven broiler. Fold in 1 C of chopped baby spinach, ½ C chopped roasted red peppers, ¼ C sour cream, and ⅓ C of mozzarella. Use pre-washed spinach and pre-grated cheese to save time. Take the time to arrange the chicken in a pretty pattern over the rice mixture if you like, then sprinkle with the grated parmesan and the remaining mozzarella. Place under your oven broiler for 30 sec to a minute until the cheese begins to bubble.* Serve immediately.
Notes
*If you don't have an oven-safe pan, this recipe is still yummy when you skip the broiling step. You'll just have less stretchy cheese drama. 😉

As my children grow, I see the pressures they face. Pressure to look or act a certain way. Pressure to excel at school or sports. Pressure to fit in and pressure to perform.

One of the best ways I know of to help them handle it all is to simply get them outdoors. Adventuring together as a family helps us strengthen our relationships and solidify our family culture, but it also just helps my children let go.

Out of doors, they get to let go of pressure and stress. They don’t have to try to be anyone; they just get to be.


That said, it’s not easy at this time of year to help them escape to nature.

I can feel it in my bones—this longing to be outside—and I hope they’re starting to feel it too. But without the glow of summer beckoning us to come outside, we have to really nudge ourselves to get out.

Snowshoeing

With snowshoes you can go places you wouldn’t be able to access otherwise. Pristine meadows of snow, with only animal tracks for company. The solitude of a winter adventure on snowshoes is always such a welcome change of pace for us; it’s a genuine escape from the noise of life.

Winter Hiking

Depending on where you live, you may find that many trails are well kept even in the winter. A winter hike is an invigorating way to get your heart rate up as you inhale fresh, crisp air. Hiking in winter offers a unique perspective of some of your favorite trails. Visit a National Park and check in to see what trails are accessible in winter and go explore!

Ice Skating

This activity is a little more challenging than some and is better suited for school-aged kids, but it full of holiday magic and perfect for memory making.

Ice Fishing

Our first ice fishing experience was a memory our family won’t forget! Our kids found it so novel to stand on thick sheets of ice and gaze into clear, freezing water. Some lakes offer ice fishing session where you don’t have to own any gear—beyond the warm clothes you’ll want to wear!

Skiing and Snowboarding

Flying down a mountain may be one of the most popular winter outdoor activities, but for good reason! I’ve so enjoyed seeing my kids push themselves and feel the resulting surges of confidence when they conquer a new slope.

Sledding

Sledding is perfect for families with kids of all ages. From young ones on a parent’s lap to older kids with a taste for thrills, it’s hard to not love this outdoor adventure.

Pushing the grocery cart with one hand because that crafty baby keeps escaping the flimsy seatbelt.

Texting with friends in the middle of the night because you’re all up with little ones, so why not?

Squeezing into dressup clothes because toddlers don’t like to play alone.

Watching your child smash play dough between chubby fingers and trying so hard to memorize that face.

You. The biggest flirt on my dorm floor. The so-called tomboy from elementary school. The tireless museum-goer from study abroad.

I didn’t really know you when we were young. (We barely knew ourselves.)

But we’re moms now.

Why I wish I knew you as a mom | A post about motherhood, the greatest uniterWe may be hundreds of miles apart. I may have never met your husband, and I’ve only seen your children on Facebook.

It’s been years, maybe even decades, since we stood shoulder to shoulder.

But I know the bone-tired, foggy-brained months with a newborn and the pull-your-hair-out-a-handful-at-a-time days of toddlerhood. I know the pre-dawn shuffle—breath held—when someone still wakes up. I know how it feels to lie in bed, completely miffed that your husband is sleeping like a rock and you’re wide awake because you THOUGHT you heard the baby.

We know. Because we’re moms now.

I often think about how much I wish we could meet up at the park and get through a halted conversation, interrupted a hundred times by our gaggle of kids asking us to tie shoes and push them on swings.

I wish I could ask you about your transition from one to two kids and how you find time to work out and what you like best about your new family-sized car.

I wish I could share with you the habits of mine that I see my oldest child starting to mirror. I wish I could confide in you about how much the noise (oh my goodness, the noise) of motherhood wears me down.

I wish we could bond over the many, many joyful moments that fill us back up.

The eager way our children dance on their tiptoes when we tell them it’s time to go to the library or when we hand them their favorite dessert.

The way our hearts feel like they might burst when our children conquer something they thought was too hard.

When I first took pen to paper to jot down this post, I was writing about why I wish I could know you as a mom.

But it ended on why I already do.

Where It Started

It all started with the Daily To-Do List I designed last year, which has become my secret weapon for balancing school, motherhood, and work and church responsibilities. I shared some of my best, tried-and-true tips in that post, so it’s worth checking out.

Since that initial post, I’ve expanded my Daily To-Do List to a comprehensive system that includes a weekly planner, a meal planner/grocery list, and an updated 2016 calendar. Together, these printables are such a great tool to help you get organized and stay that way this year!

I designed all of the pages to be printer-friendly and use minimal ink. All that white space makes them sleek and inexpensive to print. To save paper, try printing them front and back.

With the new year approaching I’ve been in a cleaning and organizing frenzy. We’ve been hauling the junk out of our house by the garbage bag full and it’s been so great! The last space I have to work on is my craft room and I saved this one for last because it’s a doozy.

I titled this post “Tips for A Clutter Free Craft Space” but that in no way means my craft room is clutter free. At the moment, it’s quite the opposite but when I’m following these tips regularly I’m able to stay on top of my crafty messes and this in turn inspires me to be more creative!

1| Control the impulse to collect. I don’t have a very big craft space so controlling what I purchase is essential. I simply don’t have the room to store a lot of stuff. I’ve come to realize that the less I own in the way of craft supplies (or anything else for that matter) means less to organize, less to store and less to keep tidy. I typically purchase supplies that I need for projects as I’m working on them and only keep stocked up on craft essentials. I’ve bought too many items that seemed like a great deal at the time and that I thought I’d use in a future project only to have them collect dust in a forgotten bin in my craft room.

2| Reevaluate regularly. Going through supplies regularly to remove things you aren’t using or that have expired or no longer work and tossing them frees up space for new supplies. If you don’t love it or you don’t use it on a regular basis it’s clutter and you don’t need it in your creative space.

3| Clean as you go. This is a hard one for me, but when I clean up the mess from a craft project as I go along it helps so much in avoiding that overwhelming mess that sometimes hits and is hard to recover from at the end of a big project. I’m a huge believer in using a timer to stay productive and as I’m crafting I’ll set a timer for 5-10 min to do a quick little tidy up. It only takes a short time, but saves BIG on the mess at the end of a project.

4| Have a designated space for everything. When you have a designated space for all your supplies it’s easier to put things away as you use them. I keep my supplies in wire baskets and clear plastic containers. I love to see what’s inside of them. When I know what I’ve got and can see it easily I find that I use it more. I also avoid buying duplicate items simply because I don’t know what I have. My label maker and these clear 4×6 photo containers (below) are two of my top organizing items when it comes to keeping my craft supplies organized and in their rightful place. These little containers are available at Michaels and are the perfect size for storing small things like stamps, ribbons, buttons, etc.

5| Use a collection bin. Putting things away as you use them isn’t always as easy as it sounds especially when a crafty project stretches on for a few days or weeks until it is finished. One things I do is use a collection bins to store project specific items until they can be put away in their proper space. They all collect there while they’re in use then once I wrap up a project they’re all in one place and can be put away easily.

This is a project I’ve been meaning to tackle for years now and at the beginning of September I was finally able to get the kids school paper clutter under control thanks to our new School File Boxes.

You guys! I don’t know why I didn’t do this sooner. This has seriously been life changing! Not only do these file boxes give us a place to store all of the kids papers long term, it has also helped us cut down on daily paper clutter as it comes home from school.

With this file system in place I find that I go through the kids papers more regularly. We have a place to organize the things we decide to keep and because we have an allotted space where we can store things, we have to be selective about what we hang on to and what we let go.

This certainly isn’t the only way to get a handle on all those school papers, but it’s worked like a dream for us so I wanted to walk you through how you can easily set up this system yourself if it’s something you think would work in your home.

Supplies you’ll need

1| Plastic File Box

2| 3-tab Manilla File Folders

3| Hanging File Folders

4| Avery Shipping Labels

5| Avery File Folder Labels

You can purchase any of the supplies listed at your local office supply store or on Amazon, the prices were very compatible at both when I was shopping around. Once you have the supplies you need you can start putting together the file boxes. I decided to put the boxes together for all of my kids all the way from pre-K to grade 12 at the same time so they’re ready for each grade as they come and so they’d all coordinate. It was also easiest to print out all the labels I needed at the same time.

Here’s a quick little video tour of our file boxes:

Print out the file labels according to package directions. Attach them to each folder. Place the hanging folders inside file box. Add one or two grade folders to each hanging file.

In each grade folder I include things like report cards, notes from teacher, special assignments and small pieces of art.

Any projects too large to fit inside the file box we photograph and discard or we store them in a separate container for larger keepsakes.

Beyond the school papers themselves, I also include a 5×7 school photo in each grade folder. I attach them to the front of the folder itself. I wanted to include some key information about each child in the corresponding grade so I put together some simple questionnaires that the kids could fill out.

Have kids fill them out at the beginning or end of each school year with information about their teacher, age, friends, etc. and they can illustrate them with a quick picture. Slip the questionnaire into the grade folder or glue it inside the front.

I also printed out a label with the kids name on it for the front of each of their boxes. I created some simple artwork, printed them on Avery shipping labels and then attached them to the front of each file box. You can download blank file box labels using the links below. The “school memories” graphics are on them, you just need to add your child’s name.

Have your child write their name or add their name using your favorite photo editing program or at PicMonkey.com using their text editor. If you want to just print the school file labels, use the PDF file link below. If you want to edit and add text yourself then download the JPG file.

I can’t tell you how pleased I am with how this system has been working for us so far. We’ve simplified the paper mess ten fold in our home thanks to these handy file boxes. If this helps you get the paper clutter under control in your home too then my mission here is complete!

The new year is right around the corner and soon we’ll all be setting new year resolutions and thinking about eating healthier. Right?

Luckily eating healthy doesn’t have to mean tasteless food or hours spent in the kitchen every day. These chocolate banana muffins are the perfect simple start to your healthy goals!

These moist, delicious muffins are made with healthy whole grains and no refined sugar or oil, but the healthy is hidden behind sweet banana and chocolatey goodness. And, with only 120 calories, 3 grams of protein, and 4 grams of fiber they make the perfect healthy breakfast on the go! The protein and fiber will help keep you feeling full and satisfied for hours.

They also work great for handing to school kids as they rush out the door in the morning, or for packing in school lunches. Believe me, the kids will never guess they are healthy.  😉

Healthy Chocolate Banana Muffins

You'd never guess these moist, chocolaty muffins are refined sugar free and full of healthy whole grains. Perfect for a healthy breakfast on the go!
Serves: 16 muffins
Ingredients
  • 1¼ cup bran cereal
  • ½ cup milk
  • 3 overripe bananas
  • 1 egg
  • ¼ cup unsweetened applesauce
  • ¼ cup honey
  • 1 cup whole wheat flour
  • ¼ cup unsweetened cocoa powder
  • 1 teaspoon baking powder
  • ¼ teaspoon baking soda
  • pinch of salt
  • ¼ cup chocolate chips
Instructions
  1. Combine cereal and milk in a large bowl and let for 4-5 minutes until soft.
  2. Preheat oven to 350 degrees and line muffins pans with 16-18 liners. I love the silicone cupcake liners.
  3. Mash the bananas with a fork and then add to the cereal mixture. Add in egg, applesauce and honey and whisk.
  4. Add flour, cocoa powder, baking powder, baking soda, and salt and mix well. Stir in chocolate chips.
  5. Scoop batter into prepared liners. Fill each about ⅔ full.
  6. Bake at 250 degrees F for 15-20 minutes, or until a toothpick comes out clean or mostly clean. Do not over-bake.
  7. Store leftovers in the refrigerator for up to a week or freeze.

At the close of the year I enjoy thinking back on the experiences that have brought me joy and the ways that I’ve grown through my experiences. I want my kids to see the value in this end of the year reflection and so I put together this simple Year in Review sheet for them.

Kids grow and change so quickly, recording the details that make them unique at whatever age they are is important. This fill in the blank printable is an easy way for them to do that. My kids especially loved that they could illustrate their yearly story with the boxes provided.  These are our favorite coloring pencils for creative projects just like this one!

We printed them out for everyone and made a family activity of it.

Use this year in review printable as a jumping off point for some family discussion. Take the opportunity to talk with your kids about the past year (the ups and the downs) and things they’d like to improve on or change in the coming year. What a great time to pull out some photos and look through them and reminisce together.
